Perched above the Arabian Gulf, 101 Dining Lounge & Marina at One&Only the Palm is one of Dubai’s most loved alfresco destinations.

The restaurant has just launched an exciting new seafood concept under the guidance of three-Michelin starred chef Yannick Alléno, the chef charged with curating the entire culinary offering at One&Only the Palm.

Taking inspiration from the renowned artist Damien Hirst’s exhibition Treasures from the Wreck of the Unbelievable, every aspect – from the intricately designed ‘fish scale’ tableware to an elevated menu of the finest seafood – celebrates the restaurant’s ocean-side location.

Adjacent to the resort’s private marina, the overwater terrace boasts panoramic views and is the spot to watch the sun set behind the city’s glittering skyline.

Accessible by yacht or jetty from One&Only the Palm, the ultra-chic lounge opens out to sprawling overwater seating.

At night and on weekends, the resident DJ and live entertainment brings a vibrant life and energy as the tempo shifts from day to night.

Menu

A synthesis of the best of the sea, the new menu at 101 introduces an innovative way of cooking and seasoning.

The resort’s culinary team worked together with chef Yannick Alléno to create dishes that follow Yannick’s philosophy of blending the finest, freshest ingredients with imagination and style.

Fusing age-old cooking techniques such as smoking, salting and fermentation, fresh sustainably-sourced seafood is presented in a modern artistic way.

Designed to deliver more than what first appears, dishes are not what they seem – revealing hidden depths of flavour or inspired bursts of texture inviting diners to dive into the deep.

Highlight dishes include Fresh squid ink pasta with sea urchin; sea bream lightly smoked with pickled vegetables, blood orange pulp and Tonka beans; and poached black cod with miso ginger broth and a mousseline of green peas and mint.

Mixology

Following Alléno’s vision for the menu, mixology at 101 playfully incorporates the deep-water theme across a series of 101 signature and Champagne cocktails and mocktails.

Highlight concoctions include Message in a Bottle and The Sinking Morgan.

Those looking to eat light will find a selection of smaller dishes on the 101 bites menu curated by Yannick and his team.

Mini-creations include a King Crab Hot Dog with Cocktail Sauce and Hamachi Sashimi with Coconut Water and Wasabi.
